Las Vegas recommendations

Have to go to LV for work next week...will have pretty much all day Sunday to hang out beforehand. Any recommendations on places to eat, outdoors things to do (any thoughts on Red Rock Canyon or Valley of the Sun?), events going on, etc? I won't have a ton of free time once the week starts, but will check out what I can.

We are arriving Saturday and will be there all week as well....we were looking for like an Easter brunch recommendation too.
