Denver food recs?

Any food recs for a Saturday night dinner for two in Denver? Looking for something chill but don't mind a little bit of fancy if need be. Any cuisine is suitable- Mexican, American, steak, wild game. Wouldn't mind something relatively unique to Colorado.

My favorite restaurant that I've been to in Denver is Osteria Marco. Amazingly good cocktails and the homemade burratta is awesome.

Rioja is very good. A bit pricy but worth it IMO.

Buckhorn Exchange is very old and very Colorado / Wild West. Liquor License #1 in the state. Food is expensive and not incredible but it's a scene.
