looking for something that can take good pictures, with decent zoom capabilities and HD video recording.
do I need one of those fancy canon cameras?
$600 is my max
will be going to peru so I want some good pictures of our hikes and some videos of sand boarding( will use my gorpro too but didn't like the videos I got from my last trip)

Ill look into that camera you linked, it looks like it has everything I want. Plus I like the size for travel.

I was a skeptic, having used large cameras for years. Decided to give it go based off of reviews, have the wide angle and the zoom and they are literally better than my five year old dslr
If you aren't shooting at night like the moon or some shite I would think about it
I even downloaded an app called ProCam that had ISO settings, focus, etc that allowed me to capture the northern lights

I love my Canon PowerShot SX720. 40x Optical zoom with image stabilization and it can fit in your pocket. Great for zooming in on wildlife and candid "paparazi shots" of the family from a distance. And it has wireless picture transfer - can connect to your wifi or create it's own access point to quickly move pics to your phone for storage / upload. I have taken and uploaded over a thousand photos so far without ever removing the SD card or pluging in to a USB drive.

I just got a refurbished canon powershot sx540 for under $200 from canon.com and took it on my trip to Africa. It's not as amazing as a fancy zoom lens, but I got awesome photos of all the wildlife and it's small enough not to be burdensome. It has 50x zoom! Really glad I bought it.

Maybe an older generation RX100
I travel with a fixed lens camera now, so it doesn't check your boxes (but it produces awesome travel photos). Fujifilm x100 line

the mirrorless cameras are also an option. check out the sony alpha. it can do a lot of what a dslr can do plus it's smaller for easy travel.

They have a bunch of sales for Nikon d5300 dslr and Sony Alpha a6000 mirorless around that price point which would probably get you the best for your money

Buying lenses would put him over the budget.

I am a photographer. Do not buy a "fancy" camera because unless you know how to use it, you will only be using it as a point and shoot.
Buy a small, lightweight point and shoot and go to YouTube to study composition.
Study "Rule of Thirds" and basic photography composition (leading lines, etc), and your vacation snapshots will be 100x better than before.
Watch 30 mins of videos and follow the simple rules. Pay attention to "Rule of Thirds"

Recently looked for the camera for my friend. She used Hasselblad, but wanted to make her photography skills better, and she also likes travelling. I found an article about Canon cameras(I chose Canon after my friend's advice) Canon Cameras and read about main features and differences, and I was suprised that I could buy something really good within 500 dollars (my budget was small too).
If you just use while your journeys and home purpose you can select Canon EOS (I chose it and my friend is happy about it now). Good luck in search!

Get a reman Nixon D3300, buy a used or reman Tamron 18-270 lens. No matter what anyone tries to tell you, a point answer shoot at the same price will be inferior.

Everything said above is gospel for a newbie.

Not really. Get a decent used off of eBay. You can also rent for not a lot of money.
A point and shoot under 600 will take good pix in good light. It will limit what you can do though. They will usually have smaller sensors and inferior processing engines.

Cool that this was bumped
I got myself the cannon powershot sx720 or something. Used during my hunt and love the zoom. Able to zoom in 100yrds and it looked amazing. Need a tripod though because the slightest movement in my hands resulted in a huge shack in the film
I did try to take a picture of a baby owl at night and could not get the settings right to save my life
