My 6s plus is on its way to my house. Is it as simple as syncing it with iTunes? Is it better to use the AT&T mobile transfer app or is that better for transferring from a non iPhone?

Go into setting on your phone, then iCloud, then Backup. Make sure you have a recent backup. That's it really.

Once you get your new phone, you can start it from your old phone backup. It's a pretty simple process.

Do you back up to iCloud? If so, just put in your apple credentials and restore from your latest iCloud back up when you set up the 6S. It will download all of your settings, apps, contacts, etc. over wifi.

I don't have it backed up to iCloud. Last night I updated iTunes on my laptop and backed up my phone there.

That'll work just as well. In the future I'd use iCloud though for regular backups unless you regularly plug in to iTunes.

i'd just get my contacts and pictures over the iCloud but not restore from backup. you can get your aps back from "purchased" section in the ap store

Same here. I bought mine from an AT&T store, and they have little machines in there that will transfer stuff for you. I just wanted my contacts, and was going to add everything else back from the app store. But he somehow got my pictures moved over as well. He said the thing is quirky with pics since they take up a bunch of space, and he was surprised it worked. Said if he had been trying to move pics the thing fails like 9/10 times.
