Iphone 5 with IOS 6...any way to update to IOS 7 instead of 8?

IOS 8 has problems with wifi and battery. That's why.

When you install a new version of iOS, your device connects to Apple's server and obtains a signature to use the software.

Apple no longer signs iOS 7 installations.

So the answer is no. There is no known way around this. It would take a vulnerability within the hardware to work around it.

afaik it was fixed in 8.1.3 but I never had any problems myself on my iPhone 5 or my iPhone 6.

*I've had many problems, but all very minor. Certainly nothing that affected wifi or battery noticeably.
