re: NOLA Home Inspectors - HungryTiger
I used this guy for a home in Lakeview: Marco Kouzoukas Home Check LSBHI #10208 504-467-2007 Three years of being in the home, and he didn't miss anything. And there were some big issues he spotted....

I always make étouffée with leftover crawfish, but you can't go wrong with frying some up for poboys. I like them in an omelette, too....

re: Going to try pork ribs on the grill today for the first time - HungryTiger
you try the smoke snake method on your kettle yet?
Have not, Stink, but just checked out a couple youtube vids on it. Intriguing. I'll give it a whirl. And, Otis, I've gone without and with the membrane (just due to laziness). Removing it produces a far superior product. Mak...

re: Going to try pork ribs on the grill today for the first time - HungryTiger
I smoke single racks on my weber kettle frequently. Just doesn't make sense to fire up the big smoker for that small of an amount. As Pearls said, create direct and indirect heat zones on your grill. Try to hold the grill temp steady around 250. Start your rack off on the indirect side. Use w...

re: Advise me on OUTDOOR FURNITURE - HungryTiger
Lots of affordable outdoor seating that is made to stand up to the elements. La z boy actually has a really good line of chairs and love seats. Can't recall what brand mine are but we ordered them online from sears I think. Check out their selection...

re: questions on smoking 8 butts in WSM - HungryTiger
Yeah, you won't be able to avoid the bark softening up. Just something you have to give up if you're not doing the full cook on the smoker. That may be worth it, though, rather than risk the meat not being right when you need it for a group that big. If you're just using the smoker, then I thin...

re: questions on smoking 8 butts in WSM - HungryTiger
I have the same size WSM and the most I have done was a full shoulder, with the pic nic and butt separated. If memory serves, it was around 20 lbs. I don't think I could have done more than double that, because the top rack was just big enough. Considering that the middle rack is typically at a b...

re: Abita Strawberry - Draft - HungryTiger
I don't think it tastes anything like bud light. I actually had a free sample of the Abita strawberry on draft at maxwells then a bud light later in the day. I couldn't take more than a couple sips of the bud light. They're really nothing alike. Strawberry drinks more like a wheat beer than a lager ...

re: Going to wine country in a couple weeks. - HungryTiger
I've made the trip a couple of times, and I think the best way to do it is to drive to certain areas (like dry creek road, healdsberg) and hit a few. That said, a couple of my favorites were: Hartford Court - best pinots and lots of them. pricey wines, but it's cool to taste a bunch of $100 win...

re: Beef Wellington (Pic thread - a la MeridianDog) - HungryTiger
Looks like my idea of a perfect med-rare. Uniform pink color, virtually no grey on the outside, and the center isn't blue at all. Rare steaks have a cool center, and by the look of those the center is warm. Hard for it not to be after 15 minutes in the oven. Impressive work....
