My fav is Boissiere. 2nd is Dolin. I find Antica too harsh for the Manhattan. Try to find the Fee Bros. Whiskey barrel aged bitters(Calandros). They make a huge diff. I love Peychaud's but in the Manhattans I like the Fee's better. Add a drop of Angostura to take it over the top....

Manhattans plz. Luxardo cherries, orange twist (from my oranges), Regan's bitters, Fee Bros whiskey barrel bitters. Red vermouth. Splash white vermouth.Good rye or high rye bourbon. Stir with ice. Strain. Serve up. Top with the twist. The Perfect Drink for me!...

You could score the skin in a diamond pattern to about 3/4 thickness like you would to sear a breast. This would allow fat to render w/o meat drying out from being exposed....

^^^^This. Pheasant dries out very fast. Wouldn't smoke it. If you want smoke flavor, set up grill for indirect cooking. Grill pheasant off direct heat with a fairly smoky fire w/ some fruitwood like peach (avail at Academy) chunks. Grill to med rare at most. A glass of really good pinot and Mmmmmm...
