I actually tried out Johnny's to see what all the fuss was about from the Johnny freaks on this board. There is one in St. Martinville and I went there thinking it would suck. It was pretty darn good....

Agreed. For a fast food joint the quality of the food coming out of those places is pretty high. I can't think of another fast food place that does what they do at that level of quality.

I do this a couple of nights a week too. I mostly just make a soup - bean soups of all kinds. It's easy too, just soak beans overnight and put in crockpot in morning with onions, etc. Tomato soup is easy and you can do all kinds of stuff with it. Eat them with a salad or grilled cheese sandwich....

it insures that the meat is cooked evenly. If you cook it right out of the fridge the outside gets overcooked before the middle is brought to the correct temperature. Room temperature is ideal, but letting it sit outside the fridge for just 30 minutes makes a big difference....

Generally, stock is made with bones and because of the collagen is slightly heavier. Broth is made with meat and is lighter. I say "generally", I'm sure there will be disagreement. The difference isn't exactly set in stone....
