Try heating it up to about 375-400* and let it run like that about 4 hours with no food in it. That should dry out the moisture. Never had that problem with my Primo Jr. Oval or my steel Keg.
Is it on the walls or the grate?...

Thursday evening I brined about three dozen chicken wings overninght. The brine consisted of water(of course), sugar, my Cajun seasoning, apple vinegar, and I wanted to add a citrus element and a beer so........

Sorry, no exact measurements but here's what I used.
Just over a half lb of andouille sliced thin
two med. onions
about 1 1/4 cup dice bell pepper
4 ribs celery
3 or 4 fresh bay leaves
6 or 7 toes garlic
two cans Ro Tel
about 1/2 cup water
2 tbsp. chicken base
1 lb crawfish

Not sure if the size matters. Mine is a 5 gal. rig and the burner sits about 4 inches from the bottom of the pot.

Just got home from the meeting. I cut a couple of slices and it has awesome flavor, tender but no smoke ring. Kinda disappointed about that.

After about six hours of slow smoking(I got busy cutting the grass out front and the yard)I wrapped it in foil and added some apple juice, sealed it up tight and raised the temp to about 285 degrees. Just took it off the smoker about ten minutes ago.

I season the meat with salt, pepper and galic & onion powders and sear the meatin a hot pan. Wait til the pan is hot before putting the meat in. I use a wide Magnalite chicken fryer. Best if it's NOT non-stick. Let the meat brown nicely leaving a good fond in the pan. Toss in onions and stir around,...
