I know it as Pig Candy. Google it by that name and you'll get plenty of hits.
There's a lot's of variations but most involve brown sugar, at minimum, and often the addition of various peppers/ spices. It can be cooked in the oven, on a grill or smoker....

For most folks, the rice is the hardest part but your's popped out very nicely. Like a lot of others have said, I'd shoot for a little more color next time.
I, like some others, don't pull the meats out when cooking most jambalayas, either. I used to but ...

Double D for me.
I did cook a 10 gallon pot of Jambalaya, using Savoie's, a couple of weeks ago. I was doing it for a friend and he had the Savoie's in his freezer. It wasn't bad but I prefer Double D....

A pretty simple recipe, MD. It's taken from the River Roads Recipes cookbook (I don't recall which edition). Their ingredient list is pretty basic and can be modified to taste. It goes something like this:
1/3 cup of oil
3 tablespoons of flour
2 medium onions (chopped)
1 bell pepper (chopped)

Made this for a Saint's party, Sunday. We finished it up tonight. Got home late, threw it on some heat, spooned it up, no garnish, served w/ just some garlic bread crisps and called it supper (or dinner depending on where you're from). Not bad if you like it...
