Thanks for the info, MD. Haven't eaten at Chili's much since my son grew up and out but now I'll make sure to hit them up, for a meal, every now and then. If they're willing to donate $50 mil to St Judes, then I'm certainly willing to toss them a $50 on occasion. It's a good thing the...

re: Smoking a chuck roast - Bayou Tiger Fan Too
Done it and like it. Season it up and throw it on the pit. Cook it for a couple or three hours at around 225. Pull it, wrap it in foil w/ a little liquid added and throw it back on the pit. Once it's wrapped, you can jack your temps up to 275 or so and let it cook until done. I don't usually coo...

Taste of Bavaria, Ponchatoula...Closed. - Bayou Tiger Fan Too
I've seen them mentioned on here so I thought that I would share. Passed by earlier, today, and their sign was gone and replaced with one saying "Mister Joe's Sushi". Apparently a restaurant, w/ a mix of Japenese and Chinese cuisine, is slated to open there in July. Taste of Bavaria's web pag...

re: A Little Crawfish Etouffee - Bayou Tiger Fan Too
No recipe?
No recipe but I have a method for you. This was somewhere between 3-1/2 to 4 gallons. I thawed out the tails, 12 lbs, and seasoned them with some Tony's and put them in the fridge. Made a roux, 1 to 1-1/2 cups of oil w/ 2 or 3 cups of flour. I like a heavier roux w/ l...

A Little Crawfish Etouffee - Bayou Tiger Fan Too
Cooked four gallons of Etouffee for a fund raiser Saturday. Probably not the best you've ever had but it wasn't bad. re: Restaurant Help - Springfield, La. - Bayou Tiger Fan Too
Charlie's, out on Hwy 22 heading towards the river, is about the best locally, in the Springfield area, and it's really pretty good w/ big portions. It's the local favorite. Lagniappe is next to Charlie's but I'd go with Charlie's first. There's a fairly new, very small place call Lil Miss Wi...

re: Mother's Day BBQ menu - Bayou Tiger Fan Too
Some good info on here. I did two whole packers (12 lb average) a couple of weeks ago. Cook...

re: Middendorf's. What a disappointment. - Bayou Tiger Fan Too
They don't just serve thin cut catfish. They have regular thick cut catfish fillets on the menu, as well. You can order it as a platter and/ or substitute it for thin cut on any combination platter. I think there's an additional cost for the thicker fish. I prefer the thicker cut fish and my wife...

re: Middendorf's. What a disappointment. - Bayou Tiger Fan Too
Believe it or not, they have pretty good fried chicken if you like it simple...flour, salt & black pepper w/ not much else for seasoning. It comes as a 1/2 fried chicken plate with fries, cole slaw and toast. One of the few restaurants around where you can still order a fried chicken plate and it...

No, I didn't...normally I find them to be higher on crawfish. They have a way bigger selection, though and I go there a lot. Doing five sacks, twenty lbs of brisket, corn, taters, sausage, salad and a couple of other sides on Friday. Gonna be a good day.......
