Besides the Ronnie's, on Florida in BR, they also have a location in Hammond just off of I-12 @ the Airport Road exit. On HWY 22 in Mandeville, near the Causeway approach, there's Boudreaux's Boudin & Cajun Meats. Was Bergeron's, who sold it to his Manager. Same cracklins as Bergeron's....

If you're cooking, as a steak, to medium rare, you'll be quite happy. If you're going farther than that, it will become dry and begin to toughen up.

It depends on the sanctioning body for the competition. Organizations like the IBCA and the TGCBCA will only allow you to use spares (either whole or ST Louis cut). Baby backs are not allowed. The KCBS, on the other hand, will allow you to use either....
