re: Tony Chachere's in Boil - Bayou Tiger Fan Too
Wouldn't do it for crawfish but I do it with peanuts, when I want to give them a little kick. Add a couple of cans of Tony's, to the water, with a sack of nuts. I let them soak until the salt's right. It gives them some kick without the stronger flavor you get when using crab boil....

re: Avoid I-12 west near Walker - Bayou Tiger Fan Too
The cover on a catch basin was off. Did a heck of a job to the rims, tires and suspensions of the vehicles that hit the opening. Lucky that it wasn't worse than it was. Could have resulted in a major pileup. ...

re: Question about cooking ribs - Bayou Tiger Fan Too
BBQ cooks fight about this almost as much as they fight about fat cap up or fat cap down! If the rib is cooked right, there's very little difference in texture, tenderness, moistness, etc. whether you leave the membrane on or take it off. Leaving it on or taking it off does little to dete...

Looks good for a first try! For most folks, the rice is the hardest part but your's popped out very nicely. Like a lot of others have said, I'd shoot for a little more color next time. I, like some others, don't pull the meats out when cooking most jambalayas, either. I used to but ...
