re: anyone ever do "millionaire's bacon" - Bayou Tiger Fan Too
I know it as Pig Candy. Google it by that name and you'll get plenty of hits. There's a lot's of variations but most involve brown sugar, at minimum, and often the addition of various peppers/ spices. It can be cooked in the oven, on a grill or smoker....

re: My first jambalaya (pls be gentle) - Updated second attempt - Bayou Tiger Fan Too
Looks good for a first try! For most folks, the rice is the hardest part but your's popped out very nicely. Like a lot of others have said, I'd shoot for a little more color next time. I, like some others, don't pull the meats out when cooking most jambalayas, either. I used to but ...

re: Which would you use for chicken and sausage gumbo? Double D or Savoys andouille - Bayou Tiger Fan Too
Double D for me. I did cook a 10 gallon pot of Jambalaya, using Savoie's, a couple of weeks ago. I was doing it for a friend and he had the Savoie's in his freezer. It wasn't bad but I prefer Double D....

re: The First Annual Turkey Taste Poll - Bayou Tiger Fan Too
If cooking it for my Mom (upper 80's), it's gonna have to be baked. My wife prefers fried. My son prefers smoked. Cooking turkey for my clan = :banghead: :banghead: I like it all, w/ baked being my least favorite. Fried and smoked have very different flavor profiles and I like them bot...

re: A Little Shrimp And Corn Soup - Bayou Tiger Fan Too
A pretty simple recipe, MD. It's taken from the River Roads Recipes cookbook (I don't recall which edition). Their ingredient list is pretty basic and can be modified to taste. It goes something like this: 1/3 cup of oil 3 tablespoons of flour 2 medium onions (chopped) 1 bell pepper (chopped) ...

A Little Shrimp And Corn Soup - Bayou Tiger Fan Too
Made this for a Saint's party, Sunday. We finished it up tonight. Got home late, threw it on some heat, spooned it up, no garnish, served w/ just some garlic bread crisps and called it supper (or dinner depending on where you're from). Not bad if you like it... re: The Jambalaya Calculator could only exist in Louisiana - nola.com - Bayou Tiger Fan Too
Best of luck, Rat. You worked long and hard at developing your calculator and it would be ashame to see someone else profit from it! It was shared by someone on my Facebook page who asked me if it was a legitimate tool that could be used by less experienced "big pot" Jambalaya cooks. I told them abs...

re: Just ordered a 30 lb sack of peanuts for next week. Recipes? - Bayou Tiger Fan Too
Put them in your pot, cover them with water and bring them to a boil. After one hour, turn the fire off and let them sit for two hours. After two hours, add two boxes of Tony's (large size), a quarter box of salt and bring them back to a boil. The second boil won't take long and you should start tas...
