So sorry to hear about the loss of your grandfather.I miss mine alot and he has been gone since 1990.Your gp sounds alot like mine was before he got sick.My dad and my FIL are both gone so my boys(and baby girl) dont have a pawpaw to do stuff with.I guess I gotta step up my game....

If it was my first time doing a brisket I would be watching the temp like a hawk.Tell him to Youtube BBQ by Franklin and that should get him going in the right direction as far as trimming, cook time,and temps.I followed his technique to the letter and cant imagine a better product....

He wont make those #'s until 3rd or 4th year.I think I was there 5 years before I made that kinda money.Alot of folks bases their expenses off that money and then get in a bind when the OT dries up.I dont like to work that much...would rather have days off....

Not all sites are union.I work at a non union site for Exxon in BR as an operator.Union sites have their advantages with seniority.They also keep the dead heads employed when they likely would have been gone otherwise....
