As appetizing as milk and fish sounds, the blackened chicken pasta was clearly a separate suggestion if you like the way the blackened redfish turns out....

If you like pasta you can do the same thing with a chicken breast and a can of rotel in some alfredo sauce.
And if you do use tony's just go easy because it'll make the sauce too peppery....

Very hot cast iron skillet
Melted butter
Blackened seasoning (ie prudhomme's) works best but i've used just tony's in a pinch
Dunk fillet in butter
Coat in seasoning
Few minutes each side

I'm not an expert on thermodynamics or anything, but as far as cooling, the mass of a bag of ice <<<<<<<<<<<<<<<<<<<<<<<<<<<is way the frick less than<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<<< the mass of a giant pot of boiling water and crawfish and you won't be doing a whole lot with it....
