Have done a brisket a number of times on my WSM. You will need to do it overnight if your briesket is on the larger side, and following the Franklin video tips will yield desirable results. Thanks! That's quite a Weber set up! I don't have a gas weber in my arsenal. Ive smoked poppers, corn, sausage wrapped with bacon, small pork loins and plenty of wings. It has two racks in it so you'd be surprised at how much you can get on it. I've run it steady 5 to 6 hours before temp drops ...

Tiger Ree, Process was not too difficult and actually kind of fun. This one was my first run at it. Fully functional but the stencil work needs to be improved upon. I followed the instructions and didn't stray much from it, except that my "paint facility" was my garage and I hurried the process....
