I don't use the water pan with beef, or with anything I cook for that matter. The water pan, with water in it, is used as a heat sink, thus the ability to keep your temp consistent in the 225° range. The downside is, it is also a fuel hog and you can burn much longer on the same load of fuel if you ...

Have done a brisket a number of times on my WSM. You will need to do it overnight if your briesket is on the larger side, and following the Franklin video tips will yield desirable results. DO NOT use the water pan because you want a nice bark to develop. I have done a few fat side down and fat sid...

re: Wow !!! Didn't know Weber had these - jmon
Thanks! That's quite a Weber set up! I don't have a gas weber in my arsenal. Ive smoked poppers, corn, sausage wrapped with bacon, small pork loins and plenty of wings. It has two racks in it so you'd be surprised at how much you can get on it. I've run it steady 5 to 6 hours before temp drops ...

Tiger Ree, Process was not too difficult and actually kind of fun. This one was my first run at it. Fully functional but the stencil work needs to be improved upon. I followed the instructions and didn't stray much from it, except that my "paint facility" was my garage and I hurried the process....

re: Smoking on a Weber - jmon
I initially started my addiction to smoking meats on a royal blue weber. I would suggest doing a pork butt next, indirect heat with the coals tucked and stacked as far to one side as you can. Use about 3/4" chimney of unlit briquettes with wood chunks mixed in leaving a cavity in the center, light a...

re: Freezing Pulled Pork and Smoked Chicken? - jmon
Vacuum seal, if you can, if not, use freezer zip loc bags. If vacuum seal, re heat in boiling water for approx 20-30 minutes for pork. For chicken, it's best to slow thaw as it tends to dry out during the reheat. If you're going to be doing sauce with your pulled pork, put it in with the pork at...
