Well one thing I do not do. I don't toast the pine nuts or any nuts. With the pine nuts I like that just little bite it gives being raw. If putting on pasta, turn off heat then stir in and toss. Why spinach? Why not just more basil? Cost about the same if you are buying. Spinach would be fine as would parsley but it will taste like spinach or parsley. Watercress makes a good pesto.
