That's the sweetbreads dish. The theme and rule the last time I spent a week in Nawlins is that every dinner had to include some sort of liver, which is how I chose Annunciation....

Although if I had just one meal in New Orleans, it wouldn't be my first choice, but I enjoyed it the last time I was there. I had the scallop with foie gras and the sweetbreads. Give it a whirl. ...
a single bite serving or small app portion...I'm trying to leave some wiggle room on portion size.
Understood, but that wiggle room is about the size of flight 370's search area. There's a huge difference between a one bite hors d'oeuvre and a small appetizer. My thinking with an hors...

8" chef's knife. Cut off top and the base so that it remains flat when stood back up. Cut down the sides just enough to lift off as much of the outer part as you want. Once the outside is removed, I still keep it vertical and make one cut adjacent to the core but not into it. I'll then turn it just ...

Free. All we needed as kids was a piece of string tied around a hunk of beef, weighed down with a nail so it sank down just a few inches around the shallow rocks of fresh Northern lakes. When they'd clamp onto the meat, we'd scoop them one by one with a pot and they would drop off of the bait as ...
