I wasn't a fan. The Creole Onion are the GOAT now. The sizzling steak was a bag of meh. It was mostly salty. I think they were going for a worcestershire sauce type flavor, but it lacked definition. Not buying again....

It's a small backtrack from your given geo perameters, but Omi on Essen @ I10 does takeout and is the best Chinese...perhaps in the state.

Not sure of the thickness, but it's pretty thin. I'd take a wild guess and say 14 gauge or so. I think that allows it to heat up and rebound quickly. ...

I do. It's about 7 years old now and treats me well. I think it's the largest size, but I could be wrong. There is nothing to go wrong on it since it is all metal and welded. No hardware to mount the handle, no wood to swell/shrink/crack. Just a true work...

Carbon Steel for sure. Go anywhere that uses a wok professionally and you will only find Carbon Steel. It heats fast and hot, rebounds quickly and seasons like cast iron.
I recommend the Pow Wok from Wokshop.

Huge raised bed fan. It is ready year-round to plug stuff in. Very little, if any weeding or grass control required. You control the soil content. I put a mulch layer on top and it maintains the moisture levels much longer and more evenly.

Cafe Habana City (Lafayette) placed anywhere in BR Metro. I'd settle for any Cuban, but CHC is the best I've had.

I think the newest Leblanc's on Airline is the nicest and most well-rounded grocery in the metro. I'm sure this one will be the same format. It's most similar to the nicer Rouse's that I've been in.
(that said, the new Rouse's they are building may trump the current Leblanc's format)

For espresso, don't skimp on the grinder as previously mentioned. I use a double-wall insulated stainless press. It does a reasonable job of holding the pot warm. I suspect the double wall glass models would work even better.
