re: Houston Restaurants - highest rated and most booked - lilwineman
North italia as the most booked is scary. Was not impressed. It's ok chain Italian food. Chez nous is a treat a bit out of the way, BCN was nice but I wanted more from an El Bulli chef, L'Olivier I've enjoyed but it never seems to have any business let alone flying under the radar. Happy to see B&B ...

re: Houston food this weekend - lilwineman
My issue is having a great time with friends is not equal to great food. $60-70 as well for drinks and split apps is a big sticker price too. Happy hour oysters at state of grace are cheap as can be or I could hit Bramble for his and get a free 44 ranch hotdog at happy hour with a $2 lone star. I gu...

re: Houston food this weekend - lilwineman
House special noodles are the best ones at Mala. The beef jerky there, stir fried green beans, and twice cooked crispy beef are favorites of mine too. The rabbit at Mala is delicious but it's a pain in the butt to eat around all of those bones. As far as Durham house, I have no desire to eat the...

re: Meat glue - making a prime filet - lilwineman
Not quite. A mcrib is the disgusting trimmings. This was the ribs broken down beautifully and formed to almost one complete set of meat without that processed disgusting texture. They cooked the product sous vide then seared in the oven with a Korean style glaze. Texture was flawless. I give the che...

We used it here in Houston for a "boneless" pork spare rib presentation and it was delicious. But we wouldn't dare lie about doing it for a "prime" filet...

re: French Market Bistro- Anyone Know Tiger Sauce Recipe? - lilwineman
Well I'm going off our old Mansurs recipes and I remember aromatic herbs (Rosemary, bay leaf, and something else) sautéed with shallots and garlic slightly reduced, folding in unsalted butter and cream to make a luscious beurre Blanc....then I would imagine whisking in tiger sauce (we did creole mus...

re: Recommend a good wine glass - lilwineman
I can't stand stemless glasses for wine. The glass gets smudges and your heat transfer through your hand to the glass will prematurely elevate the temperature if the wine. Sure they're convenient for people casually drinking and less likely to tip over, but I just can't do it....

re: Restaurants are already booked for Valentine's Day (that Sat night) - lilwineman
At least you're trying fairly early. I always had people who would book after dinner on Valentine's Day for the next year, same time, same table. Then you get the one dumbass who calls the day before and says "I'd like a reservation for tomorrow at 7pm"...oh u mean Valentine's Day, that we've been o...

re: Recommend a good wine glass - lilwineman
Technically it does nothing so guide it to your tongue. It does however guide it to your mouth like any glass lol. You control tongue position yourself. The idea behind the glassware is based on the phenolics associated with specific varietals. Piedmont, Pinot noir, Chardonnay are wines that benefit...
