re: Galatoire's NOWFE wine dinner - pics - lilwineman
I personally am not sure how much said dinner cost...I also have no clue of the aromatics. What I will say is the plates look boring and bland. Not a single picture I was presented in the list made me go "wow, I need to eat that". It was more like something I could do at home...which is not what I s...

re: Reginellis Northgate Closed - lilwineman
The bayou was the shite...good local bands, even caught some bands that hit it big there back in the day (modest mouse I believe was one), grungy and dirty, always smelled of smoke, way too much rolling rock and high life being served, cheap shots of whiskey, and pool tables...I lived there in colleg...

re: Most Bizarre Food You Actually Liked? - lilwineman
As I read the list, it feels like I have overexerted myself in the classes of weird foods...tongue, heart, brain, tuna or hamachi belly (sashimi is the tits, forget the BBQ) are all fairly normal to me now...durian was delicious, fish eyes (Salinic and juicy but spit out the exterior after), jellyfi...

re: Got my knives today and giving a shout out to DownSouthDave - lilwineman
I've got about 10 pieces of shun I acquired over a span of a year from Woot! and crate and barrel for about 50-65% off each knife. Have a 8 and 10" chef, pairing, yanagi, nikiri, santoku, and a few others....

re: Got my knives today and giving a shout out to DownSouthDave - lilwineman
Use a honing steel before every use. It maintains the edge without the need for sharpening as often. German knives are typically softer than Japanese, which has positives and negatives...the biggest negative being they full quicker. A few quick strikes on a steel before each use will straighten that...

re: Help finding a wine (Baton Rouge) - lilwineman
I'm in wine distribution focusing on the City Centre area of Houston. Have gotten out of the restaurant industry probably for good, unless one day I do my own thing. Those hours can take its toll on you. Heading back home for the holiday this weekend so might pop into corporate brew or the cove toni...
