Both of my parents are full blooded Cajun (both from Abbeville) and I've never once seen a steak on top of anything or anything on top of a steak. Other people seem to think it sounds great, I think it sounds terrible. No biggie, that's why restaurants of all sorts succeed....

I was going to leave this alone (because I was hungry and didn't even want to think about it), but since everyone else has chimed in on it (and I've eaten lunch) I won't.

You can do that, but the rice itself will crisp up just fine...and the seasonings are already there. I take a big link and remove the casing, then just lightly pat out 4 or so cakes from it. I usually just pan fry them in bacon grease and eat them with fried eggs. Remarkably good. ...

Depends what you want. BSL is a super cool little town that really comes alive on the second Saturday thing every month. Outside of that, the shops on Main and restaurants are the top attractions. The beach is about the same all the way down the MS coast, depending on wind and weather though.
