Bottled some year old lambic today and was very surprised by the results. It was not as sour as I had expected but very aromatic. I bottled some of it straight as a Grand Cru and then added champagne yeast to the remainder with the expectations that it will be more gueuze like. [img]http://i60...
Matt B from Firestone Walker is a hop chemist and they don't have the magic bullet. Not out there yet.
FBD is a Simcoe Brett pale ale from rds. Nicely done. It's refreshing without too much Brett.
It was much better when fresh, the Simcoe dry hop has really faded. I'm hoping that over time the Brett will become more pronounced, giving it a 2nd wind. ...

3BD (courtesy of SnogT) - I really like the dank piney hoppiness of this, my one complaint would be that it is a tad too malty for my pallet. Overall, best beer brewed in Louisiana. ...

Making 6 gallons of lambic to replace the 4 gallons that I am taking out of my barrel today. I might send off this latest batch of 100% Brett pale ale to a competition. It isn't as tart as the last batch but has huge run away citrus going on. My concern is that I've had some issues with the shipping process causing the carbonation to kick up in my Brett beers. It doesn't always happen but ...
