We used the honey bee farm at LSU when I was an active in my fraternity. A couple of the guys would press, cook it down, and jar it up. Damn good honey. I guess the costs were minimized for since it was a USDA farm....

A professional service will be way easier. If that isn't an option here is what I have done before:
1. A/C down as far as you can go without freezing it up. The dry air can absorb more moisture.
