 | re: Using a Double Jet Burner for Crawfish Boils has changed my life - Btrtigerfan on 4/29/13 at 4:13 pm I swapped the regulator from the 20psi it comes with to a 40psi adjustable. No real need to boil with it wide open, but when I do, it boils 40qts (half pot) in a little over 9 minutes. Never froze or iced anything. It's hard to estimate gas usage, because I am boiling 10 minutes faster than I used t...

 | re: Suggestions for a Crawfish Cook-Off score card - Btrtigerfan on 4/18/13 at 11:50 pm I would do crawfish, corn, and red potatoes. All three require different cook times.
The median sized crawfish should be judged. Not the small or large ones as cook times could vary.
The crawfish should peel easily in that the tail meat should be firm enough to stay intact without being chew...

 | re: Easy way for a Roast and CrocPot? - Btrtigerfan on 1/12/13 at 3:39 pm Quick and easy it is. 2 can cream of mushroom, 1 pack dry onion soup mix, 2 cans chicken broth and 2 cans of water. | re: Baked rice recipe? - Btrtigerfan on 1/6/13 at 8:59 pm If you need to make a large amount of rice, baking it is the way to go.
I get the foil catering/chaffing pans that have the crimp-on heavy foil lids.
This is the only time I use par-boiled rice for the record.

Put it in cold. It takes more smoke and color that way.
After about 2-3 hours, move it to an aluminum BBQ pan and cover if you want. If won't take much more smoke than that.
8-12 hours is not unreasonable at 225F.
It will be so ten...

Not too far off.
Paul Prudomme makes his gumbo by first frying chicken, then using the left-over oil to make the roux-Gris Gris does this too.
I have heard that Piccadilly uses the left over fried chicken in their gumbo.
Both chicken stew and gumbo were made w...

 | re: How to make cookies that don't flatten out like pancakes - Btrtigerfan on 1/2/13 at 7:22 pm It's a trade off. If you use real butter, they are flat. You can replace all or part of it with shortening and they will be taller in profile. Also, sifting the flour helps. Measure it by gently packing. Then sift if before adding it. Don't over mix. Fold it. Use fresh flour and baking powder/soda. ...
