I would do crawfish, corn, and red potatoes. All three require different cook times.
The median sized crawfish should be judged. Not the small or large ones as cook times could vary.
The crawfish should peel easily in that the tail meat should be firm enough to stay intact without being chew...

If you need to make a large amount of rice, baking it is the way to go.
I get the foil catering/chaffing pans that have the crimp-on heavy foil lids.

You can't really ruin one, but I'll post a few tips.
Put it in cold. It takes more smoke and color that way.
After about 2-3 hours, move it to an aluminum BBQ pan and cover if you want. If won't take much more smoke than that.
8-12 hours is not unreasonable at 225F.

It's a trade off. If you use real butter, they are flat. You can replace all or part of it with shortening and they will be taller in profile. Also, sifting the flour helps.
