Cook a gumbo and drop them in
Make a brown gravy with them (boil gizzards about 1/2 hour before you brown them for the gravy)
Wrap in foil with some Jack Millers BBQ sauce and put on the pit
Bake in the oven with some chicken livers...

I use the Tabasco pepper mash that I get at their company store and mix what I need with some brown sugar and have find that makes a great rub/seasoning. Just be careful, that mash is pretty powerful...
