I've never used 565. I've only used wyeast 3711 (french saison) for both my saisons. I'm brewing a pumpkin saison next, and i'm using 3711 again for the spice character. But my next saison i will experiment with 565, and add a touch of sour dregs to it....

I know but it's an alternate way to get them. And it's a way to get the right sourness profile you are looking for, if you aren't very experienced with sours....

Well NOLA won't be on there because they are the host brewery and the host brewery is never in the lists. And I'm will To bet great raft isn't on there due to lack of availability in Louisiana ...

I did learn something interesting I may try, however. Brewing the beer then adding the yeast and the last bit of a bottle of a sour to get some of the sourness of the beer in the brewed beer. I'm not big in sours, but this seems like a good way to get a bit of sour dregs without adding the bacteria...

Just finished up. OG at 1.060. Target was supposed to be 1.068. Total Efficiency was at 70%. Typically I get 80%. Adjusting my mash temperature must have affected my efficiency. So instead of a 7% beer it will be closer to 6%. As long as it finishes off well....

pre-boil gravity is 1.053. Target was 1.057. Mash efficiency was 85%. Had to dick around with the correct mash temp.
