re: Good seasoning/ marinade for Tuna steaks - EMILIO
Good answers here, I'd add a little fresh thyme to your marinade. Delicious with tuna. A very small amount of sesame oil and rice wine vin are good additions as well. ...

re: Anybody eaten at The Blue Crab on Lake Pontchartrain? - EMILIO
Went there the other day for lunch. First time there and it wasn't crowded but it was late in the afternoon on a weekday. Ordered calamari for an app. Was solid, said they fry all food in cottonseed oil....sounds expensive. Prices were mostly pretty reasonable but I didn't want fried seafood. I orde...
I have not been to Mondo and need to try it. Any reviews on it?
Went for lunch a while back. I had the burger and it was pretty tasty. Added Gruyere and Nueske's bacon and I was a happy camper. Wife had the fish tacos and was happy with her choice. We split the pork and shrimp meat...

re: Bourbon House in Nola - EMILIO
To write off oysters for the entire warm part of the year is silly to me. Vibrio is out there in the water all year round. Yes, it is more prevalent in warmer waters but I like to buy my oysters from reputable places that buy from reputable fishermen. Refrigeration regulations are getting way more...

That's a very specific time and place to enjoy some tuna. Unfortunately, a tuna only has one collar and it will not feed the masses. Perhaps some of the loin could make it to said barrier island getaway.......

Blackfin Tuna Collar - EMILIO
Recently got my hands on a fresh blackfin. Had one of our butchers break it down for me and now have lots of fish for my freezer. He vac sealed the collar for me. I have never attempted to cook a collar myself but I've had them in restaurants. Anybody have any experience on technique or a recipe? :...
