That is cool, reminds me of an undergrad class I took and the professor was really old and should of retired and was not up on technology. Any way our classroom was unavailable one day so they moved us to an auditorium, this guy loved the chalk board but when we got in the new class there was chalk...

Won't help in this situation, but freeze a cup of water then put a penny on top of the frozen water, if you check it and the penny is not still on top and is somewhere lower in the cup you know things have defrosted and re frozen, especially helpful at camps and such that may have power disruptions ...

as for technique, i keep it very simple and follow Martini's recipe - let come to room temp, season with salt and pepper, slather the cut ends with softened butter, place in a wire roasting rack over a roasting pan, put in 450 degree oven for 20 min, lower oven to 325 a...

I got a 4 rib, which came in at just under 8 pounds
You can pretty much figure 2 pounds per rib, and feed 2 people per rib, 7 ribs in a full rack, if you are getting a partial rack you can choose from the chuck end or the loin end, I always request the loin end...

Find someone with some fresh Meyer lemons, they are coming in right now and make the best pie, combine 3 egg yolks, 1 can of condensed milk, zest, 1/2 cup fresh lemon juice (more or less to taste) and mix well, pour in a shortbread crust And bake at 350 for 15 min and cool then refrigerate :cheers:...
