One of my favorite childhood meals. I cooked it for my in-laws and they could not grasp the concept that it was a dish with potatoes AND rice. They stopped in route to our house and bought some fried chicken "just in case".... :lol: Mom would put shrimp in it on occasion. Looks great! :c...

I grew up on Cox's smoke sausage and it is still my #1 go-to for Red Beans and Potato Stew. Use WJ's smoke sausage for jambalaya and gumbo. They also have good boudin. Was not a fan of their rice-less boudin.......
