I've used the Jambalaya Caculator before and it's incredible, but need volume help on Pastalaya. Been asked to cook a pastalaya for 100 and am not sure on how much pasta I need. My guess is 15 lbs of spaghetti. :dunno: Thanks in advance for advice. ...

Smoke them. Marinate in lemon juice, apple juice, garlic, etc before and smoke at a relatively low temp - 225. I'll spray some apple juice on them a few times during the smoke. My smoker has a water pan over the wood box and this helps to keep moist. Comes out flavorful and moist and freezes...
