First time cooking pork belly - highcotton2
Picked up a pork belly at Costco for $2.75lb. It turned out really well and seemed to have a lot less waste as compared to a butt. I smoked it for 3hrs uncovered at about 170 degrees. Then another hour uncovered at 235. The internal reached 162 and I wrapped it and cooked for about 3 more hours....
