Yard guy keeps planting lemon thyme instead of English, though he did put some English in this year. I have way more lemon thyme, though. Smells great, tastes great, but I've never used it. I imagine it would be great with fish.

I've never cooked this cut before, but I did over the weekend and I like it a lot. Not as fatty as a butt or shoulder or it didn't appear to be to me. There was plenty of fat, but more "solid meat" parts than the other cuts.

Seriously, anyone going to New Orleans or living there should make it a point to go to Casamento's unless you don't eat fried food, oysters on the half shell or chargrilled oysters. In that case, don't go. Keep in mind that it's closed for the summer, so plan accordingly.
