Isn't there a way they can do it without nuking them? Not that I'm opposed to it. Something about limiting the number times a senator can speak in a day and not declaring the legislative day over and then just letting them talk their two turns then the filibuster is well... over. Or something like that.

No. This is fillibuster in name only in that its a refusal to vote for cloture for an up/down vote. There are no floor speeches in this fillibuster.

The Dems want to force the nuclear option. They know they will probably never get 60 dems in the senate AND control of the whitehouse when there is an open seat on the Supreme Court so going nuclear now allows them to seat an extremely liberal judge with only the whitehouse and 51 in the senate. They are conceding Gorsuch now in order to get Sotomayer on steroids later on.

The filibuster isn't even a real filibuster thanks to the dems. You don't even have to do the hard work.
The filibuster was already about dead so we might as well put a final nail in the coffin.
