purging crawfish

Alright, Now I know that when I get these little guys, I need to put them in a cooler with a bag of ice on top of the sack with holes poked in the ice bag to allow drainage from melting ice and then opening the cooler so that the water will drain out. But, what I am trying to figure out is this whole purging thing. I have seen where I need to wash them good with clean water but I've also seen somewhere where I can put them in the cooler fill it with a little bit of water and pour salt in the water so that they'll spit the mud and dirt out. What exactly is the best way to purge them?

To purge or not to purge? The never ending argument in South Louisiana. I say purge them. After you are done cleaning the crawfish until the water is clear, pour 2 boxes of salt on them and cover with water for about 15 minutes. It doesn't hurt, might not make it better, but its just salt and water. So why not try to get them a little cleaner

Sounds like you got it under control...salted water and then rinse agian with clean....Now you are going to start a whole new war on to purge or not to purge

Dump them out of the sack and into the ice chest. Fill the ice chest up with water and soak for a few mintues and empty all water. You can then do the same thing and let them soak a little longer and add half box of salt in the water.

Some people swear by it. It does not make a difference to me. I don't poke holes in the bag of ice because I like to use the ice and water to dump into the pot after they are done boiling to purge them in the spicy water.

Just rince the mud. NO SALT. NO SALT. NO SALT.

If you feel they need to be washed better, then empty them into the ice chest and fill it with water from the hose pipe. Then empty the water right away. Just rincing them is enough. Tap water will make them puke up if that is what you are looking for also.

Sorry if I started the war.

I am actually boiling crawfish for the first time Friday. My birthday was yesterday (turned 29) and no one could do anything until the weekend as far as a big party goes, so we are getting 30-40lbs and are going to boil crawfish, grill steaks and ribs. I just want to have everything basically in my head of how I need to prepare them. I think I'll be alright cooking them, it's the chance of killing them before we boil them that's got me worried. Picking them up sometime early Friday morning and then I have a funeral to go to at 11 (best friends dad passed away yesterday) and then we're going to start boiling at around 5 or 6ish. I was going to cancel, but he said that he wanted to get out of the house for a little while after the funeral and so he asked me to keep it going. Anyways, just trying to get all the helpful advice I can so we have a successful boil. Appreciate it.

lol Just make sure you clean them.. Salt or no salt will create alot of debate.. I did it both ways last time I didnt taste a difference. Chef Folse stated in his last cookbook that studies showed that purging didnt do anything. But I think most people will agree that its a good idea to rinse them off. I just fill them into an ice chest fill with water and drain.

Purge, but with clean water. NO SALT. The salt toughens the meat I find, while running clean water over them in an ice chest clean them out just the same. I purged with salt for years, and IMO there is a very real difference.

You cook with salt and you kill with salt. Just a waste of salt and effort if you salt them and then hose them right off. Does nothing. Plus it will kill if left in to long.

purging them in the same water letting them soak in salt does nothing. they will throw up or shite and them eat it right up again. purging doesn't take place in minutes, its almost hours...changing water frequently.

i read a study recently from a guy from LSU that said putting salt doesn't do anything. Also tackled the myth that ones with a straight tale were dead before they were boiled.

fill ice chest with crawfish, spray/fill with water, drain dirty arse water.... repeat until all water rinsing and draining runs clear. NO Salt, does nothing. Clean the shite out of them until the water is clear, nough said.

If you know where your getting crawfish from you get them already purged. A lot of farmers have purging equipment/tanks and do the purging themselves before they sell them to market, since purged crawfish command a better price.

I personally would only buy crawfish that have been purged.

is pro-boil powder form seasoning? i have a small bottle of liquid crab boil to put in but the recipe calls for pro-boil also. can i do the pro-boil to layer them with in the cooler after they've cooked?

also, where can i find pro boil besides the internet? i have looked at walmart, and publix.

Dude screw Pro-boil but if you do use it...use it in the boiling water. Use Tony's if you wanna throw some extra spice on them when they're done.

6- sacks of Zatarans crab boil seasoning
1- 6 oz. bottle of Zat. liquid crab boil
1- 6 oz. bottle of tobasco
1.5 cups of Cayenne pepper
2 boxes of salt
6 lemons
4 cloves of garlic
onions
