So I wanna make me some Bacon, Need a Pork Belly

The general receipe Im gonna use is season it, wrap/seal, place in frig for a week.

Take out, and smoke on the pit for a couple of hours.

Cut into thick slices, fry and enjoy.

What ya got, where in BR can I get a belly. Rouse's dont have em.

the mexican meat market on florida has them some times if you can break through the language barrier. I've been told the one on seigen does as well.

And whole foods has them but you have to get there early or you may be able to call and have them hold some for you.

You can get it at the farmers market. I forget the name of the pork guy. Iverstine farms maybe.

As others have said, the Mexican markets. Sometimes Fresh Market and Whole Paycheck will carry them.

We have 4 cases of bellies that we are starting the cure on tonight. I have never fine this. Have a family friend that is teaching us.

The nice thing about Whole Paycheck is that you can buy what you need. Unless you have a team of people to help you eat it an entire pork belly worth of bacon is A LOT!!

Make sure you have curing salt.

Tocino is bacon

El Puerco or El Cerdo is pig or pork

Panceta de Cerdo is pork belly

El Vientre is the belly

So I would say something like (or write on paper) Tienes panceta de cerdo a hacer tocino?

Any of the Asian markets on Florida should have it at all times. They come in about 1-2 lbs pieces

I made my own bacon last semester. Best bacon ive ever had. Im in Oxford so Im not really any help to your main question, but youre making a good decision by making your own bacon

I have made it a couple times using pre-made cures and once using a homemade recipe from a chacuterie cookbook. Both turned out great flavor wise if a little too salty. Anybody got a good cure recipe?

I've bought it there a bunch and they always have it and I've never had a language problem. Always several English speaking people on staff. I shop there a lot because they move their product so I feel safe buying it.

Get a couple of good tacos while you are there. I buy the DiPalma green salsa verde in a bottle and the white fajita seasoning as well and that is the best for a chicken. It's a good store.
