I think it overpowers a fried shrimp or oyster po'boy. I just go heavy with the mayo and a little mustard.

What says the Food Board?

Depends. I've enjoyed a fried green tomato and shrimp remoulade poboy before.

Other than that yes I would just stick with mayo and hot sauce

As a sub for mayo, sure. But I'd do one or the other...or sub in Cousin's Creole Tomato...it works well.

Remoulade is mayo and spices, including hot sauce. I don't see a big difference in "overpowering" the flavor of a poboy if you use remoulade vs mayo + hot sauce.

Or Cousin's which is also great on a shrimp poboy, unless, of course, one is using an extraordinary amount of any condiment. You're eating shrimp with bread and condiments in each bite. It's not the same as eating fried shrimp nekkid.

That's the perfect time to put remoulade on a poboy.

Yea, for sure. I like it much better than mayo. But my go to is cocktail sauce on a shrimp poboy. I guess I just like horseradish based sauces.

Me too. I've had people unable to eat my homemade cocktail because of how strong I make it

To piggyback on this thread without starting a new one, I bought some gator patties from Capital City Crawfish. They're uncooked, a CajunGrocer product, and they're basically exactly like a burger patty in shape/size.

If I were to do sandwiches with these (I guess cast iron or grill), what would I dress them with? Poboy dressings and remoulade sauce?

It's no more overpowering than putting on mayo, ketchup, and hot sauce. That said, I'd rather remoulade with grilled shrimp than fried.
