I'll start:
If you activate airplane mode, your phone will charge twice as fast.

How is that a feature?

Underutilized features:
iPhone pioneered the ability to quickly toggle common settings, like wifi or bluetooth. Pretty amazing.

Not a feature. Simple physics. Every phone has the same "feature" You know it charges faster if the screen is off or if you are not talking on it to !

Probably the most underutilized features would involve Siri. There are many things you can do faster with Siri than navigating to and through an app. Some ones I use regularly:
Say "Traffic" to pull up a map of your current location with traffic.
Say "Timer X minutes" to set a timer.
Say "When is sunset" to see if you have enough time to mow the lawn.
Here's a good list of all kinds of things you can do with Siri. LINK

Two things that irk me are Notification Center based. I want to be able to switch Bluetooth enabled devices from within Notifiction Center. Just pop BT on, then select the device from the list of available devices to be paired.
I would also like to be able to slide up Notifications Center and have one tap access to itunes from within it. Both of those go hand in hand and would make pairing in the car and around the house that much less frictionless. The itunes deal would be nice as we'll.

Everything I pair to with Bluetooth shows up under AirPlay. Also, my phone pairs automatically with my truck when I start it.

For example, I don't want twitter sound notifications during 12:00am-6:00am. Why can't I set do not disturb to do this only. Thus, instead of navigating to my settings for twitter every night, I can just swipe up and turn on do not disturb.
FWIW in android you can use Tasker to automatically do stuff like this or create buttons that could toggle these settings (with a bit of initial setup). I don't think there is an iPhone equivalent but if I were you I'd look. Possibly in the cydia store
