Heathy Food Day at work tomorrow. Seeking healthy suggestions

...casseroles, soups, or anything that would be unique and interesting while at the same time somewhat healthy.

I always think of casseroles as being smothered in something extremely fattening to create the consistency that you want.

Eta: with cajun caviar and bean salads being an exception.

I have to go to a potluck/fish fry tonight, and I'm bringing this: LINK
It's relatively healthy, with lots of color & texture. Cold, so you won't need to heat it up while at work, with enough protein from the beans to be somewhat entree-ish.

It sounds like something Bill Lumbergh came up with. I'm sure this day will mark a sea change in the dietary habits of the fat secretaries who eat lean cuisine and diet coke every day.

Exactly. I find the culture of fat secretaries fairly interesting. Yeezy must not work around any. But their idea of 'healthy' is diet soda and microwaved instant meals that have some bullshite 'light' label on them. Eat a freaking salad or fruit for once, jesus.

I'll give it this.. some of them smell decent when heating up. My elementary school teacher used to bring one every day and heated it up for the 5 minutes before we said the blessing and headed to the cafeteria.

I remember my stomach would roar through the blessing because I was hungry and could smell her "Smart Ones" lasagna or whatever

ETA: And yes. I haven't worked in many offices (~4), but one thing they all had in common was the same women bringing Lean Cuisines every day. Made me wonder what they ate for dinner at home.

Pinterest has all kinds of "healthy" recipes that are unhealthy foods made with substitutes. Weirds me out. My mom used to do that crap--buy "light" sour cream and "reduced fat" cheese.. make pizza with weird ingredients and wheat crust. Thank goodness she doesn't anymore.
I see it all over those mommy type of blogs, and I am not a fan.

people are unbelievably ignorant about nutrition. And it only takes the slightest amount of effort to discern what is generally good for you and what isn't.

Mizzou here is a list of 80 healthy casserole recipes from Cooking Light magazine. I have not personally tried any of these but all recipes I have tried from Cooking Light have been really good. Hope this helps.

Youre still eating microwaved crap full of sodium, preservatives, simple carbs, with minimal nutrition value. Eat a sweet potato or broccoli with chicken or something.
