Cassie's is pretty sick.
She shoots the kneecaps of her opponent, dropping them to their knees, then shoots her opponent in the head. As the gunshot wound is spurting blood, she takes her bubblegum out of her mouth and plugs the hole, making it blow a blood bubble and pop.

I haven't played in forever, but I'll always have a soft spot for MK. It was the first game we got with our SNES(which was also our first console). I mean, I'm pretty sure the console came with SMW, but MK was the first game played.

MK2 on SNES is the GOAT

He levitates the opponent up, twists his limbs in a knot, and rips his/her intestines out through the mouth!!! before balling them up telekinetically and crushing them.
Honorable mention:
Scorpion: Throws a fireball that blows a hole through the opponent, exposing a beating heart. Takes a sword out and cuts his opponent's face off...it slowly falls off, exposing half the brain and still twitching tongue
D'Vorah ("Bee Woman"): Sends a swarm of bugs through the opponent, tearing holes in the chest, then sends it back where they eat the face off. The bloody skull minus the jaw falls off and she crushes it under her heel
Reptile: Spits acid in his opponent's face, melting the skin off their skull. Goes up and tears the face in half
