Onion and ranch dressing coated fresh hamachi from Tsukiji fish market in Tokyo. Really brings out the flavor of the fish when you bake it for the thirty minutes @450. Paired with a can of asparagus and instant mashed potatoes bc I was feeling lazy lol

Man it hit the spot. And the Tonys and cavenders I seasoned the fish with knocked out that fish taste I hate

Thomas Keller high heat roasted chickens. My spin is to put the 2 birds on a broiler pan with sliced potatoes (sweet and irish) and onions in the drip pan to cook in the juices. Pour the extra juices off at the end and make gravy. This always comes out great.

Part of the chicken is to eat tonight. The rest will go into gumbo tomorrow.
