Vacationing/attending a wedding in French quarter this August... Things to do?

Will be staying in the quarter for a few days before the wedding. Have been to the quarter about 10 times for work and football games. Every time I have been there I have been to one of the following: deanies, acme, Nola kitchen, gumbo shop, pat Brian's, or walk ons and then go to bars for drinks and test tube shots.
My wife will be with me for the week. What should we do for entertainment?
Get slap-arse drunk On bourbon street every night, wake up and get beignets at cafe du monde, go to the flea market, etc?
What is fun stuff to do off the beaten path that is close to the quarter?
Also, we love seafood and fried chicken. Would like to know of some good restaurants that aren't tourist traps and are relatively cheap...
Any suggestions are appreciated

You haven't visited New Orleans at all. Bourbon Street is terrible, and the restaurants you listed are terrible.
I'll put together a good list of things to do, but go to the FDB for restaurants.
Spend your time on Frenchmen street in the Marigny or uptown on Magazine St.
Go see Rebirth Brass Band on a Tuesday at the maple leaf.
Dinner at: Domenica, Bacchanal, and Peche. Lunch at Cochon Butcher and Katie's.

There are four worthwhile attractions on Bourbon imo (assuming you're out of college). Galatoire's, Lafitte's, Fritzel's, and Pat O's.

July/August nights in the Quarter are fun. Just expect hot and humid weather. Beer and frozen beverages will keep you cooled off.
