Roasted or pickled beets

Anybody have a good recipe for either/both?

For roasted, just wash them good, preheat to 400, pop them in a pan and roast until soft...maybe 45 minutes to an hour. Cool to peel.

Like Otis said. I trim both ends, rub with a bit of oil then roast.
To eat you can do the goat cheese, greens, walnuts and a vinegerette but I like them roasted with carrots or just by themselves. Cool a bit, peel cut up and a bit of salt and pepper.
Also make a soy sauce, balsamic vinegerette with a bit of orange zest, grated ginger toss beets and sprinkle crushed pistachios serve over like baby bok choy

I peel dice them. Toss with olive oil, a little thyme and S&P. Roast at 425 for 25-30 minutes stirring once.

What everyone above has said re roasting - but I wrap them in foil with a little olive oil and add some fresh herbs to the foil (thyme, rosemary, and/or parsley). Bake away and peel afterwards. If you have a pit going, can also drop the aluminum foil in the coals to roast.

Cube and sautée in balsamic, honey and a bit of oil. Cook until tender and liquid is reduced to syrup consistency.

I will literally eat any food in the world other than beets. How can you eat something so putrid?
