Quick Vegetable soup

in the mood for this...any suggestions for something very simple?

here's mine:
Ingredients
2 Cans Whole Peeled Tomatoes, Cut into 1/8’s or Hand Crushed
1 Large Onion, Finely Chopped
1 - 1 1/2 lb. Beef Stew Meat of Choice, Cubed Small
Soup Stock - 1/2 Water, 1/2 Spicy V8 Juice
1 lb. #4 Spaghetti Noodles
1 Cup Parsley, Chopped
Seasoning to Taste
Vegetables of Choice:
Lima Beans
Corn
Carrots
Turnips
Green Beans
Celery
Chopped Leeks
Assorted Greens, Chopped
Directions
In a large stockpot, add tomatoes, onion, parsley and stew meat, cover with water about 3 inches and bring to a slow boil. Cook for about 30 minutes, until meat starts to tenderize and onions are very soft.
Add remaining vegetables and the desired amount of soup stock. Bring back to a slow boil and let cook until all vegetables are done. Season to taste. Once satisfied, add noodles. Serve once noodles are cooked al dente.
