You should never skim grease off a soup until the end. Agree/Disagree?

Optimal procedure is cool it, pull the congealed oil/fat and reheat.

Skimming off those fat soluble flavors.

I use a lot of pork and beef neck bones in my "soups"... so it pretty necessary for me to skim during the process.
