Wahoo recipes

Caught a bunch of wahoo over the weekend. What's the best way to cook it?

Curry powder, onions, garlic, tomatoes, Tony's, veg oil.

Wrap in foil and steam.

Went to Balise over the weekend and had probably one of the better fish dishes I've ever had.

It was raw wahoo with some fermented red jalapenos (Id venture that Vietnamese chili paste would do in a pinch), champagne vinegar, dill, salt, and lime.

Awesome flavors but still simple and clean. Do that.

Dont get too fancy with fish like wahoo, amberjack, dolphin, etc. Too much seasoning or marinade will kill the natural goodness of the fish

Hard to beat a good sear with light coat of olive oil and some cavenders greek seasoning or old bay, finished with some fresh lemon juice.

I like wrapped and steamed fish but only when the fish is whole. Obviously not going to work with wahoo.

We used to fry it in Zats

Anyway is good

Tastes exactly like small marlin

Wahoo is just a marlin without a bill and high dorsal fin

Keep it simple, probably my favorite fish. Either grill or pan sear and finish in the oven. Coat with some good olive oil and your favorite seasoning. Cook to almost medium, let rest and squeeze some citrus of your choice just before eating. I am jealous.

Step 1-come to my house, sit back and relax
Step 2- I will blend butter, garlic, cilantro, lemon juice, lemon vest, slap ya mama seasoning
Step 3- brush both sides of fish with marinade
Step 4-grill for about 5-7 minutes depending on size
Step- grab a beer
Step 6- enjoy!

Wahoo is my favorite fish!

Keep it simple. Salt, pepper, lemon, butter and grill, broil or pan sear. Fresh 'hoo is some tasty stuff.
