tomatoes in gumbo?

on triple D just now, guy went to a place in Alabama called the gumbo shack.

this idiot "chef" just dumped in all his spices, veggies, and meats then chicken stock, then a bunch of flour and called this entire concoction his "roux."

once he cooked it all for a few hours, he dumped a shite ton of whole tomatoes and okra and called it gumbo. I cringed the entire time.


please tell me no one actually does this

being successful in some shite Alabama town doesn't mean you know anything about the food.


dumping all that shite in together and calling it a roux is idiotic. roux is flour and fat, not 90% of your ingredients mixed together at the exact same time.

The key word is Alabama.

In 2007 I was tailgating with some Alabama friends at BDS, one of the guys had made a pot of seafood gumbo. It looked great, full of shrimp, crabmeat, oysters, a dark roux. I complimented the chef and he handed me a big bowl, nothing. No seasoning at all, a mild saltiness and the taste of the roux and seafood.

Those poor shrimp gave up their lives for nothing.

Pretty everyone outside of LA thinks gumbo is a tomato and okra soup. Drives me crazy.

That episode nearly gave me a heart attack the time I saw it. He can make it and call it whatever he wants except gumbo because gumbo it is not.

Do those people you quoted live in Bama where gumbo is tomato based soup with no roux?

You forgot a few.
