Over the past two days, 24 chefs representing 24 countries have competed in the Bocuse d’Or, the culinary equivalent of the Olympics, held every two years in Lyon, France.
For the first time ever, the United States earned a spot on the podium, taking second place. In a competition typically dominated by Europe, it’s the highest finish ever for the Americans — by a longshot. Prior to this year, the Americans have never placed higher than sixth, when former French Laundry chef de cuisine Timothy Hollingsworth finished sixth in 2009.

I'm thinking first place was within reach had they plated that Guinea Fowl on some of GG's divided plates.
Anyhow Congratulations USA Team
Guess they roasted their Guinea Fowl in a ConvoTherm Oven?
In an old company, they were a big Steam Convection Oven competitor of our company.

I'm guessing Boswell wasnt on the coaching staff this year.
That competition is such a sham a few years back the winners were announced before like half the field had even begun cooking.

Yep. I'm sure a tomato was part of the problem one way or another, too.

I have a Cleveland Combi I use here at work to dry / De-gas an API we make. It works fine, but seems a total waste of an expensive oven for what I actually do with it. Have never used the steam or Combi feature, only convection heat.
Holds lots of API product though.

We've been ruling the wine game ever since the first harvest at Pontchartrain Vineyards (circa 1991) on the Northshore!!!!
