depending on the direction of the flavor:
I have used two
1) a Mojo style marinade (spanish marinade-traditionally Cuban)
2) a simple beer has worked well...it seems to break down the fibers also

What are yalls sources for skirt? I usually have a hard time finding it. If I do it is always priced like a filet it seems.

It will suddenly appear at our Kroger, then it's gone. So rare here, I actually found it as a manager's special. I don't think anyone looked for it, so it just sat.

London Broil Marinade
(enough for a 2-3 pound piece of meat)

4 cloves Garlic, chopped
1/4 cup Red Wine Vinegar
1/4 cup Balsamic Vinegar
3 Tbs Lemon Juice
2 or 3 Tbs Dijon Mustard
2 Tbs Worcestershire Sauce
1.5 Tbs Soy Sauce
1 tsp Oregano
1 tsp Thyme
1 tsp Basil
Salt & Pepper (to taste)

1. Mix together all ingredients in small bowl. Pour over meat in ziploc bag or foodsaver bag. Marinate for at least 24 hours for best flavor.

do this if you want to get the same result but take 10 times as long to cook it.

chimichurri marinade.....sear on a BIG flame on the pit
