To change skin colors, just mask the face (or whatever you want to change) and play with a combination of curves, hue/saturation, and color balance layers (but make sure to set them as clipping to the layer that's masked for the change, or just mask the adjustment layers).

That's a good way to get started with it, others may have other suggestions but that's what I do.

What I do is pretty simple. I just find a head / face
photo that matches the angle and direction as the
source picture. I do a selection of the photo and
copy and paste it on the source pic and size and
angle it over the face of the source. I use the
opacity controls to view through the pasted picture to
get the eyes / mouth to align as closely as possible
to the source. Then start working on the color and
Saturation / brightening of the picture to match as
close to possible as the source picture. .... after
you get a close match in color and size, I start with
a feathered eraser along the outsides to blend in
the outer edges of the pasted pic to the source.
Then I tone down the opacity and start erasing and
adjusting the color / brightness until the two
pictures start to "mesh". I'm constantly adjusting the
color/brightness as the project moves along to get
them matched up. ... there are times when the shadow
of the picture won't allow you do get the two matched
up well. I've started some projects and had to trash
them because of poorly matched shadowing / lighting.
I'm learning to compensate "some" the more I do, but
there are times when the best mental image you have
for a finished product is just too hard to do because
you can't find the right picture to match the source.

That might be the most frustrating part of this. Especially when you're convinced it'll work and keep playing with it only to realize it just won't happen.

Biggest issue is I just don't use Photoshop enough to remember how to do alot of things and have no training at all. I've watched a few tutorials to do stuff in the past but without repetitve use I forget the steps pretty quickly.
