Need Help With Deer Processing Question (pic added)

Popped a mule deer is West Texas and will be making sausage along with some other cuts... my question to the OB Pro's is, how long does salted sausage casing last?

Ive had some in the fridge for a little over a year from last season. Should I pitch it or will it still work?

It will loose it's elasicity if it sits too long.

Your going to be making sausage with year old casing thats going to be going in the freezer for up to a year....... just buy a new batch.

good buck, I've never had mule deer. Heard they aren't as good as a whitetail, any truth?

No guide, just outside of crane, Texas. Buddy has land out there.
