Popped a mule deer is West Texas and will be making sausage along with some other cuts... my question to the OB Pro's is, how long does salted sausage casing last?
Ive had some in the fridge for a little over a year from last season. Should I pitch it or will it still work?

Not sure, but why risk it. A new Hank is mighty cheap.

It will loose it's elasicity if it sits too long.

good buck, I've never had mule deer. Heard they aren't as good as a whitetail, any truth?

Nice mule deer! Where were you hunting? Guided or non-guided hunt?

No guide, just outside of crane, Texas. Buddy has land out there.
