3 large sweet potatoes, washed and peeled
cornstarch**
2 tablespoons coconut oil, melted

1 batch of brown butter cream cheese glaze (recipe below)
1 batch of praline sauce (recipe below)
1/2 cup chopped pecans, toasted
purple, green, and gold sanding sugar
MAKE:

BROWN BUTTER CREAM CHEESE GLAZE

1/4 cup (1/2 stick) unsalted butter
4 oz. cream cheese, room temperature
1 cup confectioners' sugar
1/2 tsp. vanilla bean paste* or extract
3-5 tablespoons milk** PRALINE SAUCE (from my New Orleans sister and pretty much neighbor, Joy the Baker). 1/4 cup brown sugar, packed
3 tablespoons unsalted butter
4 1/2 tsp. heavy whipping cream
1/8 tsp. sea salt
1/2 tsp. vanilla bean paste* or extract

Freetown Fries food truck (Lafayette) used to do king cake fries. Now closed, however.

This King Cake stuff has really gotten ridiculous. I don't even recall Kings Day being a big deal a few years ago. Next year it might be a full blown holiday with schools and business closed.

So using sweet potato fries instead of regular makes it healthier? That's how this works?

I was just saying that! I don't remember it being a big deal either. Hell, the only reason I even know Jan 6th as the Epiphany is because I went to Catholic school.

There are King Cake articles all over my FB news feed right now.. and I live in BR.

Well then, is there actually a classification for "dessert type fries"?

If I go to Burger King and axx some "dessert type fries" they gonna laugh there asses of at me.
