Ribeyes version of reverse seer.

If you like wings do yourself a favor.

Boil wings in water for 15-20 mins
Take out
Put in oven on broil for 15-20 mins

Make whatever sauce you like and toss when you take out.
Change your life.
Best way... I'm telling you give a try.

I used to say same thing about a steak before I tried rev sear.

You boys should really try new stuff.

My dad used to do leg quarters that way when i was a kid. Boil in crab boil, then on to the pit. Its the only way i would eat dark meat.

Not exactly a new method, first did them like that a couple of years ago. Basically boiling off the fat, then crisping them in broiler.

I prefer smoked

Yes, seasoned salt and cayenne pepper should be added to water before boil.

And, only broil 5-10 min on each side.

I've tried them this way before as well and they are divine.

I also like the smoke and fry method ... but boiling meat in crab boil and then slingning it on the grill is the shiznit

I do similar. Make sure to lay them out on a sheet pan with paper towels to take all the moisture off. I convection roast at 450 for 20 minutes, then flip for 10. Also add lemon pepper or lemon comand to the wings before baking.

I have found that a double fry is the way to go.

1st fry at 225-250 for about 20 minutes, then let them cool for an hour (you could also refrigerate or freeze for later at this point)

2nd fry at 350-375 for 7-10 minutes, just to crisp, they should be cooked already from the first fry.
