They are a business trying to maximize profits. I have no problem with this. This appears to be the version intended for arab countries.

I agree. Harpercollins isn't attempting to make a geopolitical statement with this map. They're a business tailoring a product to appeal to a specific target market.
However, any school, or school administrator, willing to teach their students erroneous information is doing it wrong.
