What are some good deer sausage recipes?

Got a new grinder with sausage stuffer. Never made sausage before. Any suggestions would be appreciated. I also have a smoker on stand by. Thanks

Deep South Green Onion deer sausage mix. I think the packets are enough seasoning for 25 lbs. Mix half venison and half boston butt.

Before you waste a lot of time and money and ruin a lot of good meat, find a friend that has made sausage before and ask for their help.

I don't how much sausage you are planning on making but, understand it's much more work than you are expecting.

We get ours from Kens Deer Butcher Shop in Raceland. Not sure where you located but I think you can buy it at Winn Dixie.

I've bought the Deep South Green Onion and Cajun sausage seasonings at Don's Supermarket in Reserve. Can also get casings there as well.

Not sure if anyone has in the BR area.

Its not rocket science.

One tip ill give you. After you have all your meat mixed, make a patty and cook it so you can check your seasoning to make sure its where you like it before you stuff everything.
